Country Fried Steak with White Gravy

 

Ingredients;

 

2 cups cooking oil

1¼ teaspoon salt, divided

1¼ teaspoon pepper, divided

4 (4 ounce) cube steak

38 saltine crackers (1 sleeve) crushed

1 ¼ cups flour divided

½  red pepper

4 cups milk, divided

3 large eggs

 

Preparation;

 

Heat oil in large skillet

Combine crackers crumbs, 1 cup flour, ¼ teaspoon salt, ¼ teaspoon pepper, and red pepper

Whisk eggs.  Dredge steaks in egg mixture, cracker mixture, and again in egg mixture

Fry in skillet 3-4 minutes each side depending meat thickness.  Cool on wire rack

Drain oil from skillet, leaving approximately 2 tablespoons. 

Add remaining flour to skillet mixing until it is all moist, being sure to scrape the entire pan. 

Slowly begin to add remaining milk, adding a little at a time and mixing with the flour.  The mixture will quickly thicken, continue to mix and adding milk until desired consistency

Add remaining salt and pepper to taste

 

Serve meat covered with white gravy
